This Simple Italian Rooster Zucchini Skillet combines rooster, zucchini, and tomatoes with basic Italian flavors for a simple, one-pot, high-protein dinner that simmers collectively for a full meal in underneath half-hour.

It has easy-to-find elements, minimal prep steps, and may be made with both rooster breasts or rooster thighs. The tomatoes, inventory and herbs mix to create a scrumptious simmer sauce that tenderizes and flavors the rooster & veggies

Methods to make rooster zucchini skillet bake

Elements

3 massive boneless skinless rooster breasts
1 ½ cups orecchiette pasta
3 Tbsp extra-virgin olive oil, divided
1 small candy onion, chopped
1 medium pink bell pepper, chopped
2 stalk celery, chopped nice
2 clove garlic, minced
1 can plum tomatoes in juice, not drained (14.5 oz)
1 pint cherry tomatoes
2 Tbsp dried oregano
1 Tbsp dried basil
1 Tbsp dried thyme
1 Tbsp celery seed
1 pinch granulated sugar
2 massive zucchini, sliced into 1 inch segments
3 Tbsp grated Parmesan
2 Tbsp lemon pepper seasoning salt
1 cup shredded mozzarella cheese

Instructions

Minimize the rooster breast into 1-inch cubes and preheat the oven to 350 levels F.
Boil the pasta based on bundle instructions.
Prepare dinner rooster in a big skillet with 1 Tbsp of oil till performed. Take away and put aside.
In the identical skillet, add 1 Tbsp olive oil. Prepare dinner chopped onion, pink bell pepper, celery, and garlic.
Add the can of tomatoes (with juice), oregano, basil, thyme, and celery seed. Add a pinch of sugar and simmer for 10 – quarter-hour.

Prime the dish with the coated zucchini slices and cherry tomatoes.
Bake within the preheated oven for 15 – 20 minutes.
Take away and prime with mozzarella cheese. Return to the oven and bake till the cheese is melted.

Tip: This recipe works nicely with both rooster breasts or rooster thighs. For those who choose juicer rooster, use thighs as an alternative.
