This soup could be very versatile. It may be served as a primary course for a cocktail party—both seated or in small cups for sipping in between cocktails. Or alongside crusty bread, pita bread, or focaccia for a light-weight lunch. This vegan soup could also be filled with veggies, however the dominant taste is the buttery, candy and earthy asparagus.

1 onion, finely diced
4 garlic cloves, pressed or minced
2 celery stalks, finely chopped
